Idli Podi (Gunpowder) is the Andhra breakfast table staple. Our recipe roasts urad dal, chana dal, and dried red chillies separately — each until aromatic — before grinding together with sesame seeds and curry leaves into a coarse, textured powder. Mixed with gingelly oil, it transforms a plain idli into a complete meal.
